Dave Smith
DaveSmith
David Smith is a professor in the Department of Food Science and Nutrition. His primary teaching responsibilities are in food processing, dairy chemistry and technology and sensory evaluation of dairy foods. His research focuses on value-added dairy products, such as milk protein fractions and the addition of pre-biotics to dairy products.

He received his Ph. D in Food Science from the University of Wisconsin in 1981. Under his guidance the student-led Dairy Products Evaluation Teams in 1990, 1992, and 1994 placed first in the Intercollegiate Dairy Products Evaluation Contest. He received the American Dairy Science Association Teaching Award in 1992 and the College of Human Ecology Excellence in Advising Award in 1995. He also has worked in the food industy, with Fairmont Foods and 7 Up.
