Vince Fritz is Professor in the Department of Horticultural Science at the University of Minnesota and is located at the Southern Research and Outreach Center in Waseca. His research interests focus on the development of unique production strategies for enhanced health benefit in both fresh market and processed vegetable crops. He has published in various academic journals and columns in various trade magazines. Dr. Fritz has been on the steering committee for the Center for Plants and Human Health, currently an executive committee member of the recently formed Minnesota Chemopreventive Consortium, and has been instrumental in the developing of a new research consortium with SROC, Hormel Institute, and the Mayo Clinic, called IMAGE, Integrating Medicine, Agriculture and the Environment. Dr. Fritz, received his M.S. and Ph.D. from Michigan State University in Horticulture and his B.S. from Michigan State University in Entomology.
