 | Anna Katharine Mansfield
Anna Katharine Mansfield works at the University’s Horticultural Research Center (HRC) in Excelsior. She is an enologist—a person who studies the science of wine. In the research winery at the HRC, she oversees the production of approximately 150 wines each year, and evaluates the wine production potential of new cold-hardy wine grapes developed by the Grape Breeding project. Anna Katharine received her MS from Virginia Tech, where she studied wine aroma and flavor precursors; she continues to pursue flavor chemistry at the University, where she's currently characterizing the aroma compounds of UM cultivars Frontenac and La Crescent.
